Alterações em indicadores de qualidade em filés de tilápia (oreochromis niloticus) durante o ‘’shelf life’’

Resumo

O Brasil se destaca como o quarto país em escala global com maior produção de tilápia. Apesar da espécie apresentar um pacote tecnológico desenvolvido frente a outras espécies, estudos acerca da qualidade do filé ainda precisam ser mais abordados e enfrentam desafios. Portanto, o objetivo desse estudo foi avaliar as alterações em indicadores de qualidade de filés de tilápia do Nilo (Oreochromis niloticus) durante o seu tempo de prateleira. Este estudo foi realizado a partir de quatro caixas contendo em média 30 filés de tilápia do Nilo cada uma. Ao todo, foram utilizados 60 peixes, divididos por quatro tratamentos. As análises foram separadas em quatro tratamentos sendo: o primeiro tratamento foi analisado no dia da chegada dos filés a unidade (T1), o segundo foi feito um dia antes do vencimento dos filés (T2), o terceiro tratamento foi feito dois dias após o vencimento das amostras (T3), e por último, o quarto tratamento foi feito quatro dias após o vencimento (T4). Para averiguar as alterações na qualidade dos filés, foram realizadas as seguintes analises: potencial hidrogeniênico (pH), cor, força de cisalhamento, perda de peso por cocção, capacidade de retenção de água (CRA) e perda por resfriamento. As análises estatísticas foram realizadas pelo teste Duncan a 5% de probabilidade. A variável de pH na musculatura branca não apresentou diferença (p>0,05). Porém, o pH da musculatura vermelha, apresentou diferença (p<0,05), no qual, o T4 se manteve o mais alto (6,45). Os indicativos da cor, na musculatura branca e também na musculatura vermelha, tanto em L* (luminosidade), a* (vermelho) e b* (amarelo), foram significativos (p<0,05), com exceção de b* na musculatura vermelha, que não houve diferença (p>0,05). A força de cisalhamento mostra que os filés avaliados próximo e após o vencimento (T2, T3 e T4) tiveram um número maior de força de cisalhamento, indicando uma carne bem mais rígida, em relação ao filé que foi avaliado no dia da sua chegada (T1). A perda por cocção mostrou valores maiores nos filés avaliados após seu vencimento (T3 e T4) indicando que os filés perdem grande parte do seu peso após a sua cocção quando comparados aos filés avaliados antes do vencimento (T1 e T2). A capacidade de retenção de água apresentou diferença (p<0,05), sugerindo que os filés analisados no dia da sua chegada (T1) apresentaram menor perda, o que indica uma menor retenção, A perda por resfriamento foi detectado diferença (p<0,05), sugerindo que quanto maior o tempo de prateleira, mais o filé perde água, mostrando uma grande diferença entre os filés que foram avaliados no dia da sua chegada (2,02%) e os últimos filés avaliados que foram quatro dias após o vencimento (16,67%). Portanto, o tempo de prateleira apresenta influência nos parâmetros físico-químicas da qualidade de filés de tilápia do Nilo avaliados, possibilitando que os mesmos sejam utilizados como indicativos de qualidade pela indústria.
Brazil stands out as the fourth country in global scale with the largest production of tilapia. Although the species presents a developed technological package compared to other species, studies about the fillet quality still need to be further approached and face challenges. Therefore, the objective of this study was to evaluate the changes in quality indicators of Nile tilapia (Oreochromis niloticus) fillets during their shelf life. This study was conducted from four boxes containing an average of 30 Nile tilapia fillets each. A total of 60 fish were used, divided into four treatments. The analyses were separated in four treatments: the first treatment was analyzed on the day the fillets arrived at the unit (T1), the second was done one day before the fillets expired (T2), the third treatment was done two days after the expiration of the samples (T3), and finally, the fourth treatment was done four days after the expiration (T4). To investigate the changes in the quality of the fillets, the following analyses were performed: hydrogen potential (pH), color, shear force, weight loss by cooking, water retention capacity (WAC) and loss by cooling. Statistical analyses were performed by Duncan test at 5% probability. The pH variable in the white muscle did not show any difference (p>0.05). However, the pH of the red musculature showed a difference (p<0.05), in which the T4 was the highest (6.45). The indications of color, in the white musculature and also in the red musculature, both in L* (luminosity), a* (red) and b* (yellow), were significant (p<0.05), with the exception of b* in the red musculature, which there was no difference (p>0.05). The shear force shows that the fillets evaluated near and after maturity (T2, T3 and T4) had a higher number of shear force, indicating a much more rigid meat, compared to the fillet that was evaluated on the day of its arrival (T1). The cooking loss showed higher values in the steaks evaluated after maturity (T3 and T4) indicating that the steaks lose a large part of their weight after cooking when compared to the steaks evaluated before maturity (T1 and T2). The water retention capacity showed difference (p<0.05), suggesting that the fillets analyzed on the day of their arrival (T1) showed less loss, which indicates a lower retention, The loss by cooling was detected difference (p<0.05), suggesting that the longer the shelf life, the more the fillet loses water, showing a large difference between the fillets that were evaluated on the day of their arrival (2.02%) and the last evaluated fillets that were four days after expiration (16.67%). Therefore, shelf life has an influence on the physicochemical parameters of the quality of the evaluated Nile tilapia fillets, allowing them to be used as quality indicators by the industry.
