A transformação digital na indústria alimentícia: um estudo de caso

Resumo
A Transformação Digital (TD) vem se tornando um assunto importante devido às
tecnologias que têm revolucionado completamente a era atual. Acredita-se que a TD
tenha um importante impacto em quase todos os setores, incluindo o alimentício. A
indústria de alimentos está passando por transições digitais para considerar de
maneira mais efetiva os hábitos de compra e as necessidades dos clientes,
construindo modelos que tragam uma diferenciação estratégica. A TD tem assumido
uma importância fundamental para as empresas do setor, ao remodelar radicalmente
suas operações e, consequentemente, trazer mudanças substanciais em cada uma
das etapas da cadeia de suprimentos. Neste contexto, este trabalho visa discutir
algumas oportunidades que surgem no setor alimentício como resultado dos
processos de digitalização, explorando as principais tecnologias utilizadas pelas
organizações de maneira geral e seus benefícios para cada uma das etapas da cadeia
de suprimentos (aquisição, transformação e distribuição) e seus respectivos
stakeholders. Para tanto, buscou-se na literatura estudos que analisam os impactos
no comportamento das indústrias de alimentos em função do desenvolvimento da TD,
para embasar um estudo de caso de duas empresas, uma multinacional fabricante de
molhos e condimentos e uma nacional fabricante de bebidas alcóolicas e não
alcóolicas. A pesquisa revelou que o nível de desenvolvimento da TD entre as
empresas é variável, inclusive entre as etapas da cadeia de suprimentos de uma
mesma empresa. Porém para que se obtenha a maior eficiência possível da
implementação das tecnologias, é importante que ela comece na etapa inicial da
cadeia de suprimentos e se permeie pelas outras, devido à inter-relação entre os
processos.
Digital Transformation (DT) is becoming an important issue due to technologies that have completely revolutionized the current era. DT is expected to have a major impact on nearly every industry, including the food industry. The food industry is going through digital transitions to more effectively consider the buying habits and needs of customers, building models that bring strategic differentiation. The DT assumed a fundamental importance for companies in the sector, in order to radically remodel their operations and consequently bring substantial changes in each of the stages of the supply chain. In this context, this work aims to discuss some opportunities that arise in the food sector as a result of digitization processes, exploring the main technologies used by organizations in general and their benefits acquired for each of the stages of the supply chain (acquisition, transformation and distribution) and their respective stakeholders. To this end, we searched the literature for studies that analyze the impacts on the behavior of food industries due to the development of DT, to support a case study of two companies, a multinational manufacturer of sauces and condiments and a national manufacturer of alcoholic beverages and not alcoholic. The survey revealed that the level of DT development among companies is different, even between the stages of the supply chain of the same company. However, in order to obtain the greatest possible efficiency from the implementation of technologies, it is important that it starts at the initial stage of the supply chain and permeates through the others, due to the interrelationship between the processes.
