Fertilização com ferro e zinco em batata-doce e mandioca: efeitos sobre os parâmetros produtivos, composição química e qualidade tecnológica de raízes

Resumo

Os micronutrientes desempenham um papel fundamental na manutenção do metabolismo das plantas, crescimento e produção, tolerância ao estresse e resistência a doenças. O ferro (Fe) e o zinco (Zn) são essenciais para plantas podendo ser tóxicos em níveis acima das concentrações ideais. A fertilização com micronutrientes em raízes tuberosas, que consideradas alimentos base para a alimentação mundial, como a mandioca e batata-doce, além da importância na produção de raízes para o suprimento alimentar mundial, torna-se importante do ponto de vista da biofortificação. A desnutrição de micronutrientes afeta mais da metade da população mundial levando à diversos problemas de saúde. A deficiência de ferro é um dos principais problemas nutricionais do mundo, resultado do prolongado balanço negativo de ferro devido à inadequada ingestão ou absorção pela dieta. O zinco é um mineral essencial ao organismo, com diversas funções fisiológicas e metabólicas, como a manutenção da integridade imunológica, imunidade celular e atividade antioxidante. Uma forma de combater a má nutrição desses minerais é a biofortificação agronômica que é obtida por meio da aplicação de fertilizantes ao solo e/ou aplicação foliar, sendo esta técnica uma forma de incrementar o valor nutricional de culturas amiláceas. Diante dos aspectos aqui referidos, este trabalho objetivou avaliar os efeitos das doses de fertilização com ferro e com zinco no cultivo de mandioca, cultivar IAC 576-70, sobre os aspectos de crescimento da planta, acúmulo de nutrientes nas partes da planta, bem como, composição nutricional e análises de cozimento das raízes. Nesta mesma linha, também foi objetivo deste estudo avaliar os efeitos das doses de ZnSO4 no cultivo de batata doce, cultivar Canadense, sobre os mesmos parâmetros estudados nos ensaios com mandioca. Para o alcance dos objetivos da pesquisa foram instalados dois ensaios experimentais para a mandioca. Ambos os experimentos foram conduzidos no delineamento de blocos ao acaso, com quatro repetições. Os tratamentos consistiram em doses de sulfato de ferro (FeSO4, 0; 3,8; 7,5; 11,3 e 15,0 g pl-1) equivalentes a 0, 25, 50, 75 e 100 kg ha-1 e sulfato de zinco (ZnSO4, 0, 1,5; 3,0; 4,5 e 6,0 g pl-1) equivalentes a 0, 10, 20, 30 e 40 kg ha-1, onde as fontes utilizadas foram sulfato de ferro e de zinco, respectivamente. Os ensaios foram conduzidos no primeiro ciclo de cultivo (368 dias). Já para o experimento de batata-doce foi instalado um experimento com adubação de zinco, onde se utilizou o delineamento de blocos ao acaso, com 7 repetições. Os tratamentos consistiram em doses de sulfato de zinco (ZnSO4, 0, 0,25; 0,5; 1,0 e 2,0 g pl-1) equivalentes a 0, 5, 10, 20 e 40 kg ha-1, onde a fonte utilizada foi o sulfato de zinco. O experimento teve duração de 150 dias do plantio à colheita. Para o experimento de mandioca a adubação de ferro e zinco interferiu na arquitetura da planta de mandioca. Em ambos os experimentos houve aumento na produtividade. A fertilização com FeSO4 na mandioca influenciou os teores de macro e micronutriente nas folhas (Mg, Fe e Mn), na haste (Fe e Mn), na cepa (N, P, K, Ca, S, Cu e Mn) e, na raiz tuberosa (N, K, Ca, Mg, Fe, Zn e Mn). Nas raízes cozidas, com o aumento das doses de adubação com FeSO4 observou-se aumento no teor de fibra, redução no teor de matéria graxa, e redução na perda de Ca após o cozimento. Os resultados mostraram que adubação com FeSO4 aumentou o teor de alguns minerais nas raízes tuberosas e fibra até a dose estimada de 14,7 g pl-1 de FeSO4, açúcar total até a dose estimada de 10,4 g pl-1 de FeSO4, proteína até a dose estimada de 5,3 g pl-1 de FeSO4 e em relação a textura, antes e depois do cozimento, todas as doses apresentaram maiores valores em comparação com a testemunha. A fertilização com ZnSO4 em mandioca teve efeito sobre os teores de macro e micronutrientes nas folhas (N, P, K, Ca, Mg, Fe e Mn), na haste (N, P, K, Mg, S, Fe, Cu, Zn e Mn) na cepa (Cu) e na raiz tuberosa (P, K, Ca, Mg, Fe e Zn). O aumento das doses de ZnSO4 levou a redução linear nos teores de cinza e fibra nas raízes. O Ca e Cu tiveram reduções na perda com o cozimento quando comparado com a testemunha. As doses de ZnSO4 afetaram os teores de minerais nas raízes com aumento de P até a dose estimada de 4,1 g pl-1 de ZnSO4, K até 1,5 g pl-1 de ZnSO4 e Zn até a dose estimada de 3,2 g pl-1 de ZnSO4. No experimento de batata-doce a adubação com ZnSO4 aumentou a altura da planta, massa seca na raiz tuberosa e massa seca total das plantas. Também ocorreu aumento nos teores de P, K, Mg, Ca, Fe, Zn e Mn nas raízes tuberosas em comparação a testemunha. Para o experimento de batata-doce, as alturas das plantas foram maiores até a dose estimada de 0,9 g pl-1, e o diâmetro das raízes foram maiores na testemunha. O acúmulo de N na parte aérea, K na raiz absorvente e S na raiz tuberosa teve decréscimo linear com o aumento das doses de ZnSO4. O P na parte aérea e raiz tuberosa aumentou até a dose estimada de 1,3 e 0,6 g pl-1, respectivamente. O K na raiz tuberosa aumentou até a dose de 1,1 e o Mg até a dose de 1,3 g pl-1 de ZnSO4. Para os micronutrientes o Fe, Cu na parte aérea e Mn na raiz absorvente tiveram redução linear no acúmulo. Para o acúmulo de Fe, Zn e Mn na raiz tuberosa e Cu na raiz absorvente ocorreu aumento até a dose estimada de 1,3; 1,8; 1,3 e 1,1 g pl-1 de ZnSO4. O teor de cinza na raiz tuberosa variou de 0,59 a 1,30 g 100 g-1. O teor de fibra e a textura antes do cozimento tiveram aumento linear. Os teores de K, Mg, Fe e Mn na raiz tuberosa aumentaram até as doses estimadas de 1,1; 1,3; 1,6 e 1,4 g pl-1 respectivamente, já o Ca e o Zn tiveram aumentos lineares dos teores e o S teve redução no teor até a dose de 1,5 g pl-1. Nas maiores doses de fertilizante ocorreu redução no tempo de cozimento das raízes. As perdas após o cozimento de K e S tiveram reduções lineares. Para os nutrientes Fe, Cu, Zn e Mn ocorreram menores perdas a partir das doses estimadas de 1,4; 1,1; 1,6 e 1,1 g pl-1. Portanto conclui-se que a cultivar IAC 576-70 adubada com FeSO4 teve aumento da produtividade de 6 kg pl-1, até a dose estimada de 8,2 g pl-1. Foram observados aumentos nos teores de macro e micronutrientes, destacando-se o aumento de 163% no acúmulo de ferro nas raízes tuberosas. No experimento de mandioca com adubação de ZnSO4, o número de raízes tuberosas aumentou linearmente, com interferência das doses na arquitetura das plantas e no acúmulo de macro e micronutrientes, com aumento do teor de Zn nas raízes tuberosas. Já para o experimento de batata doce houve aumento da matéria seca total das raízes tuberosas e da planta inteira até as doses estimadas de 1,5 e 1,3 g pl-1 de ZnSO4, respectivamente. O tempo de cozimento diminuiu com o aumento das doses do fertilizante. Estes resultados evidenciam aumentos de produtividade com a fertilização com micronutrientes em mandioca de mesa e batata-doce e apontam para a possibilidade de incremento no valor nutricional das raízes de mandioca e batata-doce com a fertilização com micronutrientes sem prejuízo na qualidade de cozimento.
Micronutrients play a key role in maintaining plant metabolism, growth and production, stress tolerance and disease resistance. Iron (Fe) and zinc (Zn) are essential for plants and can be toxic at levels above ideal concentrations. Fertilization with micronutrients in tuberous roots, considered as staple foods for the world's diet, such as cassava and sweet potato, in addition to the importance of root production for the world food supply, becomes important from the point of view of biofortification. Micronutrient malnutrition affects more than half of the world's population leading to various health problems. Iron deficiency is one of the main nutritional problems in the world, the result of prolonged negative iron balance due to inadequate intake or absorption from the diet. Zinc is an essential mineral for the body, with several physiological and metabolic functions, such as maintaining immune integrity, cellular immunity and antioxidant activity. One way to combat the malnutrition of these minerals is agronomic biofortification, which is obtained through the application of fertilizers to the soil and/or foliar application, this technique being a way to increase the nutritional value of starchy crops. In view of the aspects mentioned here, this study aimed to evaluate the effects of fertilization doses with iron and zinc in the cultivation of cassava, cultivar IAC 576-70, on the aspects of plant growth, accumulation of nutrients in plant parts, as well as, nutritional composition and analysis of root cooking. Along the same lines, the objective of this study was also to evaluate the effects of ZnSO4 doses on sweet potato, cultivar Canadense, on the same parameters studied in the cassava trials. In order to reach the research objectives, two experimental trials were installed for cassava. Both experiments were carried out in a randomized block design, with 4 replications. The treatments consisted of doses of iron sulfate (FeSO4, 0; 3.8; 7.5; 11.3 and 15.0 g pl-1 ) equivalent to 0, 25, 50, 75 and 100 kg ha-1 and zinc sulfate (ZnSO4, 0, 1.5; 3.0; 4.5 and 6.0 g pl-1 ) equivalent to 0, 10, 20, 30 and 40 kg ha-1 , where the sources used were sulfate iron and zinc, respectively. The assays were carried out in the first cultivation cycle (368 days). For the sweet potato experiment, an experiment with zinc fertilization was installed, in which a randomized block design was used, with 7 replications. The treatments consisted of doses of zinc sulfate (ZnSO4, 0, 0.25; 0.5; 1.0 and 2.0 g pl-1 ) equivalent to 0, 5, 10, 20 and 40 kg ha-1 , where the source used was zinc sulfate. The experiment lasted 150 days from planting to harvesting. For the cassava experiment, iron and zinc fertilization interfered with the architecture of the cassava plant. In both experiments there was an increase in productivity. The FeSO4 experiment in cassava obtained results for macro and micronutrients in the leaves (Mg, Fe and Mn), in the stem (Fe and Mn), in the strain (N, P, K, Ca, S, Cu and Mn) and in the tuberous root (N, K, Ca, Mg, Fe, Zn and Mn). In the cooked roots, with the increase of the fertilization doses with FeSO4, it was observed an increase in the fiber content, reduction in the fat content, reduction in the loss of Ca after cooking. The results showed that fertilization with FeSO4 increased the content of some minerals in the tuberous roots and fiber up to the estimated dose of 14.7 g pl-1 of FeSO4, total sugar up to the estimated dose of 10.4 g pl-1 of FeSO4, protein up to the estimated dose of 5.3 g pl-1 of FeSO4. For texture, before and after cooking, all doses showed higher values compared to the control. In the experiment of ZnSO4 in cassava, there were results for macro and micronutrients in the leaves (N, P, K, Ca, Mg, Fe and Mn), in the stem (N, P, K, Mg, S, Fe, Cu, Zn and Mn) in the strain (Cu) and in the tuberous root (P, K, Ca, Mg, Fe and Zn). With ZnSO4 fertilization, there was a linear reduction in ash and fiber contents. Ca and Cu had a reduction in loss when compared to the control. For fertilization with ZnSO4 there was an increase in some minerals in the tuberous roots such as P up to the estimated dose of 4.1 g pl-1 of ZnSO4, K up to 1.5 g pl-1 of ZnSO4 and Zn up to the estimated dose of 3, 2 g pI-1 of ZnSO4. In the sweet potato experiment, ZnSO4 fertilization increased plant height, tuberous root dry mass and total plant dry mass. There was also an increase in the levels of P, K, Mg, Ca, Fe, Zn and Mn in the tuberous roots compared to the control. For the sweet potato experiment, the plant heights were higher up to the estimated dose of 0.9 g pl-1 , the root diameters were higher in the control. The accumulation of N in the shoot, K in the absorbent root and S in the tuberous root led to a linear decrease. P in shoots and tuberous roots increased up to the estimated dose of 1.3 and 0.6 g pl-1 , respectively. K in the tuberous root increased up to a dose of 1.1 and Mg up to a dose of 1.3 g pl-1 of ZnSO4. For the micronutrients, Fe, Cu in the shoot and Mn in the absorbent root had a linear reduction in accumulation. For the accumulation of Fe, Zn and Mn in the tuberous root and Cu in the absorbent root, there was an increase up to the estimated dose of 1.3; 1.8; 1.3 and 1.1 g pl -1 of ZnSO4. The ash content in the tuberous root ranged from 0.59 to 1.30 g 100 g-1 . The fiber content and texture before cooking had a linear increase. The content of K, Mg, Fe and Mn in the tuberous root increased up to the estimated dose of 1.1; 1.3; 1.6 and 1.4 g pl-1 respectively, whereas Ca and Zn had a linear increase in the contents and S had a reduction in the content until the dose of 1.5 g pl-1 . There was a linear reduction in the cooking time, showing that at the highest dose the time was shorter. The loss of K and S had a linear reduction. For the nutrients Fe, Cu, Zn and Mn the loss of nutrients was lower from the estimated dose of 1.4; 1.1; 1.6 and 1.1 g pl -1 . Therefore, it is concluded that the cultivar IAC 576-70 fertilized with FeSO4 had an increase in productivity of 6 kg pl-1 , up to the estimated dose of 8.2 g pl-1 . Increases were observed in the levels of macro and micronutrients, highlighting the increase of 163% in the accumulation of iron in the tuberous roots. In the cassava experiment with ZnSO4 fertilization, the number of tuberous roots had a linear increase, with the interference of doses on plant architecture and on the accumulation of macro and micronutrients. As for the sweet potato experiment, there was an increase in the total DM of the tuberous root and the whole plant up to the estimated dose of 1.5 and 1.3 g pl-1 of ZnSO4, respectively. These results show increases in productivity with Fe and Zn fertilization and point to the possibility of increasing the nutritional value of cassava and sweet potato roots without losses in cooking quality.
