Levantamento da aderência dos restaurantes da cidade de Sorocaba/SP a iniciativas sustentáveis

Abstract

Estudos publicados em 2015 pela Global Entrepreneurship Monitor, junto com o SEBRAE, mostram que os estabelecimentos da classe “Restaurantes e outros estabelecimentos de serviços e bebidas” têm diversas barreiras que impedem sua consolidação no mercado. Tendo isso em vista, o presente trabalho elaborou um questionário que visa não só mapear as iniciativas praticadas no dia a dia dos restaurantes da cidade de Sorocaba que sejam aderentes aos pilares da sustentabilidade (social, ambiental e econômico), mas também coletar a percepção dos empreendedores a respeito do tema. Como resultados, foi possível concluir que existe uma boa abertura desses empreendedores para discutir o tema sustentabilidade no seu dia a dia, mas o discurso adotado deve ser adequado ao contexto; ou seja, esclarecer a relação que existe entre sustentabilidade e a perenidade do restaurante através de uma maior integração com a comunidade local, redução de custos operacionais através da revisão de processos internos, incluindo consumo de energia elétrica, água e produção de resíduos e a necessidade de treinamento dos colaboradores para garantir a correta execução dos processos. Nesse contexto, existe a oportunidade de aproximação entre os estudantes de Engenharia Ambiental da Unesp Sorocaba e esses empreendedores para iniciar projetos de consultoria voluntários que contribuem para a formação do aluno e com a implementação de ações sustentáveis no ramo alimentício de Sorocaba.

Studies published in 2015 by the Global Entrepreneurship Monitor, aside with SEBRAE, show that establishments of the type “Restaurants and other establishments of beverage services' 'have numerous barriers to achieve market consolidation. Therefore, the present study aims to map not only the practices present on the daily basis of the restaurants in Sorocaba that are adherent to the three pillars of sustainability (social, environmental and economics), but also collect the entrepreneur's perception about the topic. At the end of the study, it was possible to conclude that the entrepreneurs are open to discuss the theme, but the point has to be aligned with their interests; in other words, it is necessary to clear the relation between sustainability and the longevity of the establishment through improvement on the integration of the restaurant within its community; reducing operational costs by reviewing all the internal processes, including energy and water consumption and waste generation, and, lastly, training the staff to guarantee the continuity of those improved practices. In this context, there is an opportunity to bring together Environmental Engineering students from Unesp Sorocaba and these entrepreneurs to start voluntary consulting projects that contribute to the student's education and with the implementation of sustainable actions in the food industry of Sorocaba.
