Neste trabalho determinou-se a dimensão 1, a dimensão 2 e o peso das nozes de macadâmia e suas respecivas amêndoas, a fim de classificá-las em pequena, média e grande. As propriedades físicas da amêndoa de macadâmia foram calculadas em função do teor de umidade. As isotermas de sorção foram realizadas nas temperaturas de 20, 30, 40, 50 e 60°C. Estudou-se a cinética de secagem da noz e da amêndoa de macadâmia nas temperaturas de 30, 40, 50 e 60°C e velocidade do ar de secagem de 1,0 m/s, e temperaturas de 40, 50 e 60°C e velocidade do ar de secagem de 1,5 e 2,5 m/s, respectivamente. A macadâmia utilizada nesse trabalho apresenta a classificação: 21% pequena, 66% média e 13% grande. Verificou-se que o teor de umidade tem influência direta na densidade aparente, densidade real, porosidade, ângulo de repouso, velocidade terminal, calor específico e difusividade térmica da amêndoa de macadâmia. As curvas experimentais das isotermas de sroção foram ajustadas aos modelos de GAB, Henderson, Henderson Modificada, Chung Pfost e de Halsey Modificada, sendo que o modelo que apresentou melhor ajuste foi o de GAB. No estudo de cinética de secagem, verificou-se que o modelo de Page pode ser utilizado para descrever o processo de secagem da noz e da amêndoa de macadâmia. Verificou-se também que o aumento da temperatura e da velociade do ar de secagem conduziu ao aumento do potencial de secagem

The objectives of this work were to determine the dimension 1, dimension 2 and weight os macadâmia nuts and its respective almonds, in order to classify them in small, regular and great, to determine the physical properties of the almond of the macadâmia as fuctions of the moisture content, the sorption isotherms in the temperatures of 20, 30, 40, 50 and 60°C, and to study the drying kinetics of macadâmia nut in temperatures of 30, 40, 50 and 60°C and air velocity of drying of 1,0 m/s, and drying kinetics of the almond of macadâmia in the temperatures of 40, 50 and 60°C and air velocity of drying of 1,5 and 2,5 m/s. The macadâmia used in this work presented the classification: small 21%, 66% regular and great 13%. It was verfied that the moisture content influenced in the apparent density, real density, porosity, angle of repose, terminal velocity, specific heat and thermal diffusivity of the almond of macadâmia. Experimental data of the sorption isotherms were adjusted to the models of GAB, Henderson, Modified Henderson, Chung Pfost and of Modified Halsey, and GAB model present better fit. In the study of the drying kinetics, it was verified that the model of Page can be used to describe the process of drying of the nut and the almond of macadâmia. It was also verified that the increase of the temperature and the air velocity of drying lead to the increase of the drying potential
