Neste trabalho estudou-se a influência da temperatura de secagem e espessura inicial da amostra na cinética de secagem e nos atributos de textura de abacaxi orgânico desidratado em secador de leito fixo. A velocidade foi mantida a 1,5 m/s em todos os ensaios. As temperaturas estudadas foram: 40, 50 e 60°C e as espessuras de: 0,70, 1,00 e 1,30 cm. Foram calculados os coeficientes de difusão efetivos a partir do ajuste dos pontos experimentais de cinética de secagem pela solução analítica da 2ª Lei de Fick, considerando-se geometria de placa infinita, com ambas as faces expostas à secagem, transferência de massa unidirecional e desprezível resistência externa à transferência de massa. A textura foi analisada a partir do método TPA (Texture Profile Analysis) no texturômetro TA-XT2i. Para melhor interpretar os resultados da cinética de secagem, o volume das fatias foi determinado durante os ensaios, a partir de medidas da espessura e diâmetro. Observou-se que quanto maior a temperatura e maior a espessura inicial das fatias, maior o coeficiente de difusão efetivo. Quando a espessura da fatia é mais grossa, a temperatura causa uma influência maior na cinética de secagem. Quanto a temperatura é menor, a variação de espessura causa maior influência cinética. Quanto à textura, observou-se que a variação da espessura inicial exerce maior influência aos atributos de textura que a variação da temperatura de secagem

In this work it was studied the influence of the drying temperature and initial thickness of the sample in the drying kinetics and in the attributes of texture of dehydrated organic pineapple in a fix bed dryer. The air velocity was maintained to 1,5 m/s in all of the rehearsals. The studied temperares were: 40, 50 and 60ºC, and the thickness of: 0,70, 1,00 and 1,30 cm. The effective diffusion coefficients were calculated by the adjustment of the experimental points of kinetics drying for the analytical solution of the second Fick's Law, being considered geometry of infinite plate, with both exposed faces, one-direction mass transfer and despicable external resistence to the mass transfer. The texture was analyzed using the method TPA (Texture Profile Analysis) in equipment TA-XT2i. The volume of the slice was determined during the rehearsals, with measures of the thickness and diameter. It was observed that as large the temperature and larger the initial thickness of the slices, larger the effective diffusion coefficient. When the thickness of the slice is thicker, the temperature causes a larger influence in the drying kinetics. When the temperature is smaller, the variation of thickness causes larger influence in the kinetics. As for the texture, it was observed that the variation of the initial thickness exercises larger influence to the texture attributes that the variation of the drying temperature
