Extrato de hibisco (Hibiscus sabdariffa L.) como antioxidante natural aplicado em óleo de soja

O interesse atual por antioxidantes naturais de fontes vegetais vem crescendo no Brasil, principalmente por antioxidantes bioativos. O hibisco (Hibiscus sabdariffa L.) é rico em compostos bioativos, além de possuir propriedades antioxidantes e antimicrobianas. O cálice é a parte da planta mais utilizada, devido seu elevado teor de compostos fenólicos, e suas sementes são ricas em ácidos graxos poliinsaturados, sendo consideradas como subproduto da indústria. Este estudo teve como objetivo avaliar o efeito antioxidante do extrato etanólico de hibisco na estabilidade oxidativa de óleo de soja sob estocagem acelerada em estufa. Os extratos etanólicos de cálices e sementes de hibisco foram avaliados quanto ao teor de compostos fenólicos totais e à atividade antioxidante por meio dos métodos DPPH, FRAP e sistema β-caroteno/ácido linoleico. O extrato de cálices de hibisco apresentou maiores quantidades de compostos fenólicos totais (64,18 mg EAG/g) e atividade antioxidante (65%), portanto, foi adicionado no óleo de soja. Os tratamentos: OS (óleo de soja), Tocoferol (óleo de soja + 300 mg/kg de α-tocoferol), Extrato (óleo de soja + 300 mg/kg de compostos fenólicos de extrato) e Mistura (óleo de soja + 300 mg/kg de α-tocoferol + 300 mg/kg de compostos fenólicos de extrato) foram preparados e submetidos à estocagem acelerada em estufa a 60°C. As amostras foram analisadas em 0, 6 e 12 dias quanto ao índice de peróxidos, panisidina, valor total de oxidação, estabilidade oxidativa e teor de tocoferóis. Dentre os tratamentos, o Extrato promoveu maior eficiência na inibição da formação de compostos primários e secundários da oxidação lipídica, além de proporcionar maior estabilidade oxidativa e maior retenção de tocoferóis totais (96%) na estocagem. E ao final da estocagem, o Extrato também se mostrou eficaz na redução das alterações físico-químicas ocorridas no óleo de soja, superando o antioxidante natural α-tocoferol. Embora o óleo de hibisco não tenha demonstrado valores relevantes de fitosteróis, apresentou clorofila, vitamina E e tocoferóis totais.
The current interest in natural antioxidants from vegetable sources has been increasing in Brazil especially regarding bioactive antioxidants. Bioactive compounds can be found in hibiscus (Hibiscus sabdariffa L.), which is also rich in vitamins and minerals, and has important antioxidant and antimicrobial properties. The calyx of hibiscus is the most used part of the plant due to its high content of phenolic compounds, while its seeds are rich in polyunsaturated fatty acids and are considered a by-product of the industry. This study aims to evaluate the antioxidant effect of ethanolic hibiscus extract on the oxidative stability of soybean oil in accelerated storage test. The ethanolic extracts of calyces and hibiscus seeds were evaluated to determine the total phenolic compounds and their antioxidant activity using DPPH, FRAP and β-carotene/linoleic acid methods. Compared to the seed extract, the extract of hibiscus calyces presented a greater amount of phenolic compounds (64,18 mg EAG/g), as well as antioxidant activity (65%), so it was added in soybean oil. The treatments used were: OS (soybean oil), Tocopherol (soybean oil + 300 mg/kg of α-tocopherol), Extract (soybean oil + 300 mg/kg of phenolic compounds from the extract) and Misture (soybean oil + 300 mg/kg of α-tocopherol + 300 mg/kg of phenolic compounds from the extract) were prepared and subjected to accelerated storage in an oven at 60°C. The samples were analyzed on days 0, 6 and 12 to determine the content of peroxides, p-anisidine, total oxidation value, oxidative stability and tocopherols. Among the treatments, Extract was more efficient at inhibiting the formation of primary and secondary compounds from the lipid oxidation. It also provided higher oxidative stability and higher tocopherols retention (96%) during the storage. At the end of the storage, Extract was also efficient at reducing physical and chemical changes in the soybean oil, which surpassed the activity of the natural antioxidant α-tocopherol. Although the hibiscus oil did not present relevant quantity of phytosterols, it presented chlorophyll, vitamin E and total tocopherols.
